You can get T brackets at Home Depot. On HomeDepot.com you can view the current inventory at your local store. Everbilt 3 in x 3 in Zinc Plated T Plate . In the end, it's far more important that the platen panes be 100 deg apart compared to the angle of the cradle. You can make a 90 deg cradle and then put a stick or dowel under the spine of the book to raise it slightly to better match the 100 deg angle of the platen. I think what you want is ACRYLI...

I just read Landin's Instructable to look at his cradle design. All you need to do to support a different angle than 90 deg. is to bend the 90 deg 'L' brackets to whatever angle you decide to use (i.e. 100 deg). Seems overly complicated for what you need to do. You basically need a copy stand with some way to hold the pages flat. In the simplest case, the camera, and even the lights, could be positioned on tripods instead of the complex system you've shown. That being said, overkill doesn't necessarily hurt...
