+1 cross-platform NAPS2 for easily obtaining excellent results... :D

Clean, modern interface in Linux unlike many PDF tools.

Accepts existing image files as input, in addition to providing a scanning interface.

Ok, did a test, as long as I don't try and split these pages for better compression, everything works out fine. I think in general people worry far too much about possible quality loss when resaving a few times to JPEG format, and it should certainly not be an issue when book scanning.
