I would be interested if anyone has experience with the software DSLR Remote Pro and DSLR Remote Pro Multi-Camera has the Breeze system.

This may not quite be the response you're looking for, but how about coming over to this thread and testing (or better yet, helping out with) our own, open-source, multi-camera control app -- it's a early days, but it is specifically designed for book scanning and there's a windows version ready to download.
