Need help processing color images after scanning

Hey I'm pretty fine with processing images with scan tailor and getting the best result without color bit how can I get the best results with a color image especially from a book with lots of pictures? I don't want a long drawn out process using something like photoshop which can be tedious when tryig to scan a book but a way similar to how scan tailor processes non color images and cleans them up.

I am using a Mac by the way

Scan Tailor has a "Mixed" mode in the output stage which attempts to separate images from text. Try enabling it (the default is "Black and White").
