Continuing with my newbie problems...
A good viewer that let me easily switch between the background text and the image (or even side by side) of .djvu files. Extra plus if it also allows editing of the text (proofreading).

DjView4 allows you to view the hidden text (under the View menu item):
As for editing, that's a different story. It's on my to-do list for Bindery, my DjVu (and soon PDF) binding program. It won't be difficult, but it's not a high priority for me ATM. I'm not aware of any programs that can edit the text.
